Cut cut the vegetables and apple into small cubes.
Cook the vegetables separately for 1 minute, then dip it in ice water. Book cold.
Prepare the vinaigrette. In a bowl, oil, vinegar, honey or agave syrup, salt, pepper, chives and almonds. Mix the dressing with vegetables.
Pour into ramekins and turn the ramekins on a plate. Serve with a salad.

- 1 handful of almonds coarsely ground
- 1 carrot
- ¼ Endive
- 1 leek
- ½ apple
- 1 shallot
- Chives
- Salt
- Pepper
- 2 c. Coffee olive oil
- 1 c. Coffee cider vinegar
- 1 c. Honey or agave syrup coffee
