Risotto with lentils, vegetables and coconut milk

How can I do?

In a wok, heat the olive oil I with ginger to fry the chopped onion. I've mixed the mixture of cereals and legumes and thoroughly with a wooden spoon.

I immediately poured the coconut milk, reduce heat, cover the wok and simmer for 15 minutes.

At the end of the cooking time, I add vegetables and lemon juice. I seasoned and prepares the plates.
Ingredients:

  • 1 onion
  • 120g mixture of Thai rice, yellow soybeans, red lentils and green lentils
  • 400 ml coconut milk
  • 300 g of steamed vegetables (broccoli florets and carrot slices)
  • Salt and pepper
  • 1.4 cup of coffee ground ginger
  • 1 coffee cup lemon juice
  • 1 cup olive oil
