Pierre Hermé Chocolate Mousse

How can I do?

Chop the chocolate into small pieces

Boil the milk. Off the heat, add the chocolate and stir to make smooth with a wooden spoon. Add the egg yolk.

Beat the egg whites. Add half way through the sugar while continuing to beat. Add 4.1 of whites to the preparation, to make it soft and then add the remaining whites gently.

Pour in the package of your choice and refrigerate overnight.

  • 170 g dark chocolate 70%
  • 8 cup whole milk
  • 1 organic egg yolk
  • 4 egg whites Bio
  • 20 g cane sugar blond
