Preheat oven to 180 ° C. With a mixer, beat egg whites until stiff with a pinch of sugar and a pinch of salt. In these whites, sugar and beat again for 2-3 minutes or until the mixture is firm and glossy.

In a bowl, hazelnut powder, salt and rice flour. Then, with a spatula, gently stir the egg whites to the mixture of nuts.

With a teaspoon of the dough in small mounds laid out on a baking sheet with parchment paper or a silicone mold with prints of 5 cm in diameter. Cook about 12 minutes so that the muffins are lightly browned.
