Double Chocolate Cookies

Melt the chocolate in a water bath. Dilute the almond puree with olive oil and mix into the pan with the chocolate. Stir until the chocolate is melted.

Place flour in a bowl. Add a pinch of salt. Make a well in the center and add the egg yolks and melted chocolate. Mix well.

Crush the white chocolate in a mortar. Add and drop the pieces into the bowl and mix well with your hands. Shape into a ball and let it rest in the refrigerator for 30 minutes.

Preheat oven to 200 ° C.Recouvrer a baking sheet with parchment paper. Take small balls of dough and crush them with the fingertips on the plate to form the cookies.

Let cool 15-20 minutes before serving.

These cookies will keep fresh in a Tupperware for about a week.
