Cream of carrot with coconut milk

How can I do?

Peel and chop the shallots and garlic. Peel and cut the carrots into rounds.

In a hot pan oiled, fry the shallots.
Add the carrots. Salt. Pepper. Stir and cook for 5 minutes.

Add the vegetable broth and coconut milk.
Simmer 25 minutes, until the carrots are soft.
Mix and serve, sprinkle with coriander and pink pepper.
Ingredients:

  • 500g carrots
  • 2 shallots
  • 1 clove of garlic
  • 1 c. in s. olive oil
  • 30cl vegetable broth
  • 25cl coconut milk
  • Pink pepper
  • 2 sprigs of cilantro or parsley
  • Salt
  • Freshly ground pepper

Total time: Preparation + cooking time: 35 minutes
Yield: 4 people
