Cherry clafoutis

How can I do?

Preheat oven Do In a bowl, beat the sugar and eggs and egg yolks until it foams slightly. Add the flour and ground almonds previously roasted a few minutes in the oven. Mix well to form a smooth paste. Add rum, milk and cream and mix well.

Place the pitted cherries in a buttered baking dish (I use a flat transparent for this type of cake Pyrex) and dough over clafouti.

Bake 30 to 40 minutes depending on the oven (top should be golden brown and the batter should have solidified)

Remove the pan from the oven and let cool at room temperature (again, if you use a Pyrex dish, cake cooling begins slowly peeling and only the walls slide a knife blade to loosen)
Ingredients:

  • 10 cl cream 30%
  • 30 cup of whole milk
  • Sugar 100 g
  • 2 eggs + 1 egg yolk
  • 25g ground almonds roasted in the oven (optional)
  • 60 g flour
  • 1 shot of rum (optional)
  • 620g cherries without stones
